A cookie recipe that is sure to make spirits bright

Christmas is just a few days away, which means most people are shopping for last-minute gifts, traveling to see loved ones, or simply staying home. No matter what your plan is, we think this cookie recipe is a great way to try something new, make something fun and colorful, and a way to make someone else’s day brighter too. These cookies are a great gift for the sweet tooth in your life and anyone who enjoys a good holiday treat!
Ingredients:
1 cup – Butter Softened
1 cup – Confectioners Sugar
1 Egg
1 ½ tsp – Vanilla Extract
2 ¼ cups – Flour (all purpose) mixed with a dash of salt
2 cans – Candied Cherries (green and red) halved
1 cup – Pecans
Directions:
In a small bowl of mixer, cream butter until fluffy. Gradually add sugar- beating until light. Beat in egg and vanilla. Stir in flour mixture and mix well. Stir in cherries and pecans, cover airtight and chill for 1 hour. Divide dough in thirds, and on a floured surface shape each piece of dough and roll into 12 inch rolls. Wrap each roll in waxed paper and chill at least 3 hours or until firm. Slice into ¼ inch slices (a serrated knife works best).  Place slices about 1 inch apart on ungreased cookie sheets. Bake in preheated 350F degree oven for 12-15 minutes or until lite brown at edges.  Cool on racks, and store airtight in cool dry place.  Makes about 144 cookies. Happy Holidays!
